Also for this I consider Australia's cuisine to be like.... vegemite, meat pies, bush tucker, that sort of thing.... Even though we have such an incredible multicultural food scene, like... Mexican food still counts as 'G' even if you can easily get it from pretty much anywhere here 😋

..decent pies and pasties re aust @Jynx  even that cornish cook on tv made pasties all wrong He was prob doing it how they do them now.were cornish miners where I grew up ok most left 60 years b4 I was born, but nothing like his pasties, plus they have cold pies in england with pork in them ..  what th'.. ok rick Stein, englands answer to 'Huey' oh itll be alright while trying to plate a 3 ingredient tasteless mess they made ..

@TAB The trouble is it can be very hard to find a decent pie in Australia. i make my own! Each time  different herbs and spices, and combination meats. We like mince from beef, pork and beacon, with lamb, mild (or hot when in the mood,) chillies, mixed dried herbs, onions, carrot, garlic, fresh oregano, and parsley all very finely chopped up or blended, topped with a thin slice of cheese.

sounds nice @DownMoreThanUp  some less is more, well for me anyways .. prefer meat and gravy, ok chunks of meat okay, peas okay,mash ok. mushroom, pepper, bout it lol (not all together tho)

Maybe if it's made authentically it's actually decent @TAB haha when I was in England/Scotland/Ireland I just remember most available foods were some sort of deep fried abomination. Though I did try haggis and it tasted remarkably like the meat in a shop-bought meat pie 🤔😂

 

OMG delicious @DownMoreThanUp I love home made pastries!! Been a while since I've done a chicken pot pie, I don't even think I have a pie dish! This must be rectified! 😋

@TAB Okay. i do love mushrooms as well. And have a recipe using them as well. My wife is not keen on mushrooms. However your taste in pie is what i did not like about pies here. A pastry cup with a few pieces of sinue ridden meat, and watery steaming hot gravy spurting all over me every bite. i hated that.

 

The pie mince i make is smooth and thick and everything in it is very finely cut up with all the flavours well blended and cooked.

 

@Jynx i have not tried chicken pies yet. Personally i find that chicken mince so bland, for chicken is as well. So i would make a hot spicy satay style sauce to accommodate for that. A sauce with lots of cut up chilli peppers, carrots, mushrooms and fresh herbs like basil and marjoram to taste it up rightly.

D purely because for reasons beyond understanding it's food that has suited my metabolism through all the bad sleep hygiene not eating properly and toxins I have lived with I'm still physically capable today.

 

and the Edmunds cookbooks there, if you know you know!
